Double Layer Pumpkin Pie

First Layer

Mix in large bowl with wire whisk until smooth:

    4 ounces cream cheese, softened
    1 Tbsp milk or heavy cream
    1 Tbsp sugar

Gently stir in:

    1 1/2 cups thawed Cool Whip whipped topping or whipped heavy cream

Spread on a prepared graham cracker pie crust.


Second Layer

Pour into bowl:

    1 cup milk

Add and beat with wire whisk until well blended:

    2 pkgs. (4 serving size) Vanilla Inst. Pudding-Pie filling

Add and stir in with wire whisk, mixing well:

    1 can (16 oz.) pumpkin
    1 tsp. ground cinnamon
    1/2 tsp. ground ginger
    1/4 tsp. ground cloves

Spread mixture over cream cheese layer.

Refrigerate at least 3 hours. 

Garnish with additional whipped topping
and nuts if desired. Yields 8 servings.
