Cottage Pudding Cake This simple but delicious cake-like dessert is great for a strawberry shortcake! Or, top each piece with ice cream and your favorite sauce, or spoon it over with a pie filling - like cherry or peach. It's also nice when topped with fresh fruit and a dollop of whipped cream!   My husband, Chuck, is the "official taste tester" for Janessa's first Strawberry Shortcake, made with this recipe.   Combine all ingredients and beat until smooth: 1 3/4 cups flour 2 tsp. baking powder 1/4 cup soft shortening 3/4 cup milk 3/4 cup sugar 1/2 tsp. salt 1 large egg 1 tsp. vanilla Pour into greased and floured 8x8x2" square or 9" round cake pan. Bake at 350f for 25-30 minutes. Serve warm.
